GUMBO
4 cups onion
1 cup green pepper
1 cup celery
3 T garlic
8 cups chicken broth
2 cups chopped chicken breast
1 link Kielbasa or 1lb. shrimp
1 cup flour
1 cup oil
Cajun seasoning
hot sauce
1) Make a roux using flour and oil. Cook and stir constantly until roux is
a dark chestnut color.
2) Add veggies, and garlic to roux. Mix constantly. Once veggies sweat add
sausage.
3) Add mixture to hot chicken broth. Add cooked chicken and rest of
seasonings.
4)Cook for about 2 hours.
5) Serve over top of cooked rice.
